Verb stem

The verb stem (어간) of a 용언 (verb) is simply the Infinitive Form minus the final 다. Every 어미 (verb ending) is applied to the stem.

Another way to think of it is that the verb itself is really the verb stem, and since verbs must have an ending, the dictionary form is the one listed in dictionaries.
